Today, I’m sharing a refined yet easy-to-make recipe that brings together the subtle sweetness of fennel, the richness of salmon, and the silkiness of light cream—all beautifully wrapped in fettuccine. This Fennel Cream with Salmon pasta dish is perfect for a cozy dinner or an elegant weekend meal.

Ingredients:

1 Tbsp olive oil
300 g finely sliced fennel bulbs
5 g finely chopped garlic
Chicken stock (as required)
350 g fettuccine pasta (cooked al dente)
15 g butter
300 g skinned salmon fillet, cut into 1 cm cubes
125 ml light cooking cream
10 g grated Parmesan cheese (for garnish)

Instructions:

1. Sauté the Aromatics
In a large saucepan, heat the olive oil over medium heat. Add the finely sliced fennel and chopped garlic. Sauté gently until the fennel is tender and aromatic.

2. Add Stock & Pasta

Pour in enough chicken stock to moisten the fennel mixture. Add the pre-cooked fettuccine pasta and mix gently to combine.

3. Cook the Salmon

Add the butter and the cubed salmon to the pan. Toss everything gently over medium heat, being careful not to break the salmon pieces. Cook for about 4–5 minutes or until the salmon is just cooked through.

4. Make it Creamy

Stir in the light cooking cream and allow the mixture to simmer for another 5 minutes. This allows the flavors to meld and the sauce to thicken slightly.

5. Serve & Garnish

Transfer the pasta to a large serving platter. Finish with a sprinkle of grated Parmesan cheese for that perfect umami touch.
